Potato Rolls

  • Ingredients:
    • Dry yeast - 2 pkg. (1/4 oz. ea. Or 7g)
    • Warm water - 1 ½ cups (375mL)
    • Dissolve yeast in warm water.

      Stir in:
    • Warm mashed potatoes - 1 cup (250mL)
    • Sugar - 1/3 cup (85mL)
    • Shortening - 2/3 cup (170mL)
    • Salt - 1 ½ tsp (7.5mL)
    • 2Eggs (lightly beaten)
      All-purpose flour - 7-7 ½ cups (1.75 -1.875L)
  • Preparation
    • Mix until firm dough forms. Turn onto floured surface. Knead until smooth and elastic (about 5-7 minutes). Place to rise, punch down once, then put in pans. Let rise until double in bulk.
    • Bake at 350°F (175°C) for 13-16 minutes.
    • Makes 3 dozen (36 rolls).
